Ecology of Yersinia spp. in food.

In this presentation the relevant information regarding the
ecology of Yersinia spp. in food is reported. The traditional
and molecular methods available in the literature used for this
purpose are described. Moreover, the results obtained studying
the ecology of Yersina spp. in ready-to-eat vegetables by cul-
ture-dependent and independent methods are included as well.
